I'm always amazed when I see other peoples UIs. Mine always have loads of buttons! No matter what class I play. E.g. Cupertino - how can you pvp without aspect of the pack/cheetah? Or PvE without misdirection? How can you live with so few skills?
HeHe they are there.. its not easy to see in the pic, but if you look at the buttons at the bottom at either side there are 2 other button bars that are faded (can see them better in game) when I mouse over those bars they fade back into view (feature of bongos).. theres where my aspect skills and others are located.
I highly recommend CT Mod due to it's stability and feature set. I've yet to encounter a major problem over the past three years.
To the screen clutter issue ... CTMod allows you to scale buttons and bars, so the have a small screen footprint. Along with smaller buttons, assign key strokes and then hide the bar all together.
Ico Oh, cruel fate, to be thusly boned. Ask not for whom the bone bones. It bones for thee.

I find a lot of nice AddOns at wowinterface.com, but there are several other sites out there as well.
I use Bongos, simpley gives you 10 bars you can hide, size, shape, move and also effect the other elements such as bags, pet bar etc.
here my UI with bongos. http://wow.curse.com/downloads/details/2003/

This helps to keep my UI uncluttered.

Here is a good site that does nothing but UI screenshots.
http://www.ctscreens.net/
Read through each screenshot's comments to see what is being used, etc.
http://wow.curse.com/downloads/addons/ is imo the best site for addon/UI downloads.
I myself am using these self created UIs: PvP: http://img217.imageshack.us/img217/235/wowscrnshot092407183801uk6.jpg
