I keep reading this, but don't quite understand it.
I just started the 21 day trial this weekend and there is just so much to learn. lol
Your skills raise while offline? How do you choose which skills raise. I'm confused, can someone please explain this?

as long as you pick a skill to train, yes they train offline. and theres hundreds of skills...it all depends what you want to do in game and where you want to go with your skill plan

Wow actually theres alot you your questions.
Depending on what route you took creating your avatar. Combat, mining, trading research you should raise those skills by right clicking on the skill you want to raise. It does it automatically over time but you'll have to relogin to learn another skill. You should at 1st raise your learning skills as it lowers the cost of training other skills.
There are skillbooks you can buy and use once you have the ability to use them. i would also suggest going to the forums on the main website and reading some ppl's examples of how othe players have skilled up.

You pick attributes, that’s what is important they determine how long it takes skills to train. They are important but usually not so much that there is any need to recreate a character. In the end, your probably only talking about the difference of a day for each long skill you train. Usually less. Besides, the upcoming patch will allow you to make changes to attributes if I'm not mistaken. As for skills, you can train any skill you want as long as you have the "skill" to do it. All the early skills are cheap and easy to find.
If you know you’re going to be offline say 12 hours. Train the skill that will take the closest amount of time. While online is when you want to train the new skills or the skills with the lowest amount of time.
Its quite simple really when you select a skill to learn such as Caldari Figates for example it displays a timer that tells you when it is finished. This timer continues even when you are offline. Once a skill is learned you need to manually select another skill.
Another great example of Moore's Law. Give people access to that much space (developers and users alike) and they'll find uses for it that you can never imagine. "640K ought to be enough for anybody" - Bill Gates 1981
Also , if your account is expired then u will no longer learn any skill u might have training .
U will have to reactivate the account in order to continue training.
Please do not do this unless you know for an absolute fact you will be sticking with the game for a while. Training your learning skills early on will only make your gameplay boring and you will probably leave the game. Train up your combat oriented skills or whatever you are focussing on for fun early on but leave those learning skills a little. Get your core skills up to a decent level (3 or 4 depending on what skill exactly) and then work on your learning. Saving those few days of training early on means nothing if you are bored off your ass for a month waiting on learning skills.
