If you're playing on an open-PvP server, you might also want to check out the faction split between horde and alliance. If you find yourself eternally outnumbered (or outnumbering your enemy) then it can make PvP problematic and/or annoying.

Hellscream is a high pop server and a great server to be on for both factions.
Don't pick any server on the Vindication Battle Group. Instances were jacked last time I was there. I spent 2hrs trying to get into H UP walking in circles before I transferred to Hellscream. It had been like that for awhile and I doubt it's been fixed. If you wanted to get into a low level instance, you were just screwed. Heroics have priority.
Also, I wouldn't suggest a PVP server. World PVP in WoW is beyond the most retarded f'ing thing I've ever seen.

You won't have to compete with other players for quest mobs, or for crafting nodes etc. It's also easier to find rare mobs and things like that. But the downside is you will have a harder time finding groups for dungeons at endgame.

It's also easier to build a name for yourself on a medium or low pop server. I pug heal a lot, and as soon as I log in I usually get messages from tanks asking if I will heal them. On the same token, I also have a big list of 'good tanks' and I generally know who the bad tanks are.
