FF7 without question. As for MMO's go I would love Asherons Call to update graphics and the UI would need an overhaul. Do thoes 2 things and I would instantly buy it again.
Hmmm some older ones I can think of would be Battletoads, Metroid (old school metroid not the fps injustices), golden axe (though I THINK they did/are remaking this), Simpsons arcade game, and altered beast. I'm sure there are more I would just LOVE to see alot of the classics with updated graphics.
Edit: Someone mentioned Xenogears. YES YES AND YES. How could I possibly forget that lol. And no, not xenosaga eww. Xenogears. PS1 epic RPG.
That is if Square can manage to leave well enough alone and not go changing everything about it to be just like 13 (though it'd still probably be 10x better than 13 was imo).
I would love to see a remake of Freelancer. At the time it came out it was such a refreshing game. With lots of potential. if it was made again but with more features built into the base game to bring the world alive it would be a godly game.
Also I want a remake of the cyberpunk game called Hardwar. That game.. so many hours and so many memories. It was ahead of its time.
Of all the games that are dead now or will be dead soon that I've never tried, the Chronicles of Spellborn and Pre-NGE Star Wars Galaxies rank highly on my wishlist of games to be remade.

I know but I'm not too sure about the whole FPS thing however. It may work though. Look at what Bethesda did with Fallout.
