But I'm getting stuck in spots like these:

There's just no way I can do this with this setup. I'm a Monk/Mes and my henchmen are dying before I can even get a single heal off. I just started yesterday so perhaps I'm doing something wrong. My gear is the one step up from the starter gear. I have majority of my points into healing prayers. Am I missing something? Like, better henchmen, better gear, or spells?

Well I don't remember that quest for sure but a general stragedy would be to use that flag to put the hencmen behind you a little ways and attempt to pull a small group towards them.
The henchies generally will run out after whatever you attack and in that situation they will pull everything. So have them hang back, pretty much a full agro circle back and once the group gets half way between where they were and where the hencies are you can get rid of the flag and have the henchies run to your rescue.
Another way to do that quest....(maybe, I'm not sure how far you are) but if you get to Yak's bend, you can suddenly have a group of 6 people and if you walk back with that group without going through towns, it will be much easier. This can be time-consuming though so I don't recomend it unless you absolutly can't get anything done.
I just ended up going a different direction. I went east and did a mission or something there that had me collect parts to a trebuchet and defend a wall. I got another level there in the process. But to defeat the segment that I posted above seems like its still going to pose as an impossibility.

Tell us which mission it is.
By the situation on the picture, I reccomend carefull pulling with longbow. You must first determine how many groups of charr are there. Also you seem to be underleveled for that quest. In ascalon area with low party size some quests are very hard to beat with just henchmen. You will need to get lv 20 heroes for that probably.

I couldn't really see the quest on this computer or what level you are, but I would definitely get higher level gear as soon as you can. It helps a lot. Also, check out this site: http://www.gwpvx.com/PvX_wiki It's a great resource for skill builds and that should help you some as well. Another thing, do you have any of the other campaigns or just the original one? I ask this because in Nightfall and Eye of the North, you can get Heroes which you can customize with runes (for armor, you can get these for your armor too) and weapons. They also tend to be a bit stronger than henchmen. I would suggest that as soon as you can, go to those campaigns and get heroes to help you, if you have the campaigns, of course.
If not, the stategy the other person in this thread is a good one. A lot of this game takes patience and waiting for mobs to move. It takes more strategy than most games out there. You can't run in and expect to live (ok, sometimes you can but for the most part, no). The flagging tool is very useful and I still use it a lot.

Now, as far as gear goes I understand that it comes from crafting in towns. Now, the only gear I can seem the get is the same stuff I am wearing. Here's where I stand right now:

I'm in Frontier Gate right now by Great Northern Wall. There's a few quests I have that are just a walk in from where I am. But again, I'm more curious on getting gear. I come from Lineage ][, World of Warcraft, and EVE Online where items/gear are continously switched out and upgraded. Is that not the case here?
Oh, and to add I'm playing the very first portion of the trilogy. I didn't skip ahead and play the two expansions. I wanted to start from the "beginning".

I would sugest you something right away before you waste too much time. If some side quest is long and difficult and the reward is too low, skip it. At this point you should concentrate on main missions:

Leave those side quest for later if you will be interested in small pieces of lore and exploration.

Not sure if you've already skipped this or managed to do it using the other advice, but heres what I used to do when I started out:
Try dropping your ranger henchman and having another monk in the group, two monks in a 4 man group can help a lot more than you think (even in hard mode when you've finished the campaign) and, player monks don't like this, generally AI controlled Monks make far better healers (quicker and rarely make mistakes).
Plus, it is far better for your main character to be the main damage dealer because you will most likely be a much higher level then your mercs meaning you will do more damage to enemies at a lower level then yourself than they will. So, I suggest playing around with a smiting build for yourself instead of being the healer (until later on when you have better group composition using heroes and higher group numbers).
It's a shame you have chosen mesmer as your secondary to start with because a physical weapon based profession would have done even more damage to lower level enemies.. automatically, nothing to do with your chosen skillpoint allocation. This is because a lot of the weapon skills arn't a fixed amount of damage, they usually 'add' to your weapon damage. But, while your smiting or mesmer skills damage will usually be a fixed amount or range, your auto attacks with the monks weapon will still hit for more on lower level enemies.
For the method, you should flag your mercenaries on the long bridge (so they dont follow you, its button is on the bottom of the minimap in case you missed it) and try to pull out smaller groups youself.. just range attack one of them then run straight back to your mercs (your healer merc will heal you when you get closer if you've taken a few hits). Hopefully you only brought 1-2 groups of charr with you and wont get any adds if you flagged the mercs back far enough. Then repeat as needed.
Also, once you get to Lions Arch travel over and do the first few quests (literally 1 or 2) on the nightfall campaign or the eye of the north campaign or both (if you have them), so that you get a few heroes, then go back and continue with the original campaign. Things will start to get easier when you have some heroes. If you don't have those other campaigns and plan on doing the original campaign solo with only mercs then you are in for a rough ride.. its probably not impossible with mercs but I wouldn't recommend it. Getting a few heroes on those campaigns won't ruin the flow of the story you are currently on or the other campaigns stories.
I remember what it was like starting out on the original campaign using only mercs until Lions Arch and it was sloooow.
