Someday a company is going to make a game that lets you choose your skills (or class based but can multi-class), build a house/have a plot of land and lets you fly all on the same character.

Someday it will happen.  Some games today get close:

Istaria - bipedal race can learn all skills and build, can't fly.  Dragons can fly and build, can't multiclass

Vanguard - some building of property (limited selection though), can fly, can't multiclass.

Any others?

Sorry land based so eve doesn't count

DCUO added lairs (housing) in their latest update

DCUO has multi-role but not multiclass .. can fly at level 1

Yes to multi-role and housing.  No to flying (although flying mounts might be introduced).

Multi role is I guess the same thing, lets you go beyond your just a tank or dps...

They added lairs hmm may have to check that out agian.
