It's been ages since I have given any mmo a serious chance, so I will not cast any judgement on any of them released over the last few years. The reason however I started this thread is because I wonder if any mmo exists (or soonish be released) in which I can choose whether or not I want to be a hero or a civilian/crafter and still have the option to have a fulfilling playstyle.
I am not a fan of pvp, not because I fear it (okay I do, but ignore that fact *wink*, but because I don't seek it. The reason I make this clear is because there may be an mmo or upcoming mmo that is heavily pvp focussed, but also (extra focus here) based around pve crafting and developing of "normal" life.
I may become one of the most active pvpers in such an mmo, I have no idea since those things evolve over time, but I seek a pve sandbox environment within a living world with danger.
I have not tried yet, but at the the time I post this Archeage might be something to look at, is this a good idea?
As an extra personal note I might add that although I know it is far from possible as of yet, which mmo do you think comes closest to Sword Art Online? That anime series gives a great example how an mmo could be, with heroes, civilians and craftsmen, etc.

Hard to say. Albion online kind've has what you're looking for. Though ultimately every game will be fighting focused in some way. PvP forced in areas, even for crafters. Ultima Online is a game where you can be pretty much anything you want to be and is a Sandbox PvE game (has it's own separate PvP worlds that are identical). You can be a master craftsman and own a house / vendors to sell your stuff. That or a miner, fisher, lumberjack, etc. You should be able to even open your own tavern / restaurant for people to go to. Though the game is really old, and I'm not sure how much of a community is left, much left the RP community that would partake in that last bit. In addition, there are no nodes in Ultima Online. Every tree may be cut, each inch of a mountain may be mined, ocean may be fished or deep sea fishing if you have a boat.
If you're able to find a RP guild that still plays it, it may be just the thing you're looking to play. In addition, you're able to join evil in game factions or guilds. If you travel to the PvP world on your server (it's kind've like Light World / Dark World on Zelda), you're able to join Chaos factions and Order Factions that are at constant war. Even start Guild Wars if you're so inclined.
Aside from that... Black Desert is looking to have a fairly realistic world with medieval towns. Though that game is main combat focused at present. Everquest Next has interesting ideas, but they seem too fantastical and impossible to people who've been waiting for such things. Looking at The Repopulation as well as Shroud of the Avatar... but I'm losing faith that Shroud will be the game Ultima Online wise. Somehow new technology means we just can't perfect things as they were in the old days (such as having no nodes for gather and just being to gather anything and everything, or place stacks of items on the ground).
I'd say Archeage probably isn't what you're looking for. The PvP is open once you hit 30 and after that point it's a very PvP centric game. Plus if you want to craft or farm you'll be at a disadvantage if you're a free player due to the labour points.
Personally I would say your best bet looks like The Repopulation. You will have an option to play on the Normal Ruleset servers where you can get that PvE experience in full and opt into PvP in contested territory if you so wish.
Alternatively the Hardcore Ruleset allows for PvP everywhere but members of your own faction will remain friendly to you.
Apart from that you get all the things you want from a sandbox, crafting, economy, housing etc.
Unfortunately we don't yet have a release date for the game but it's the one I'm waiting for right now because I'm basically looking for the same things you are.
