I'd have to say Disc Priest during the Cata and MoP xpacs. Blizz decided to totally gimp me in WoD which if frustrating after 4 years of honing my skills for a particular class.
My runner up would probably be the Medic in Wildstar. Unfortunately, the game only has two BG's and botting was rampant when I played.
If Carbine added a BG or two and it was apparent that bots in PvP had been dealt with for the most part, I'd be all over that game.

I played healers in the past on WoW, WO, SWtOR, and Rift. The Sorc in SWtOR was a lot of fun but he was OP as hell. My favorite was the Shaman in WoW, she was just so versatile that you were never idle.
WoW druid in vanilla I basically mixed feral and healing gear and was nearly unkillable. Later on disc priests with speed boosts heals and shields became very fun to me also.
While not known for its pvp EQ1 had 2 great pvp healing classes in the early days Shamans and Druids. Shamans with heals, nukes, blind, slow, root and DoT's. Druids with heals, nukes, root, snare and DoT's.

Probably still the biggest fan of my Shaman in WOW. Really now more than ever, where stacking your spells in the right order has such a huge impact on overall healing (and yet isn't always automatic, so your rotation isn't automatically going to be the same at all times.) Not all healers made it out as fun (in fact I can't really think of a reason you'd want to heal on a Druid nowadays, with Savage Roar being like the only utility you get apart from your heals, whereas other healers get so many more fun things to play with.)
Despite the game's awful rotation quality, I'd have to cite Warrior Priests (WAR) as another favorite. In part because it had this crazy complicated dual-selection system where you had one enemy target and one friendly, and your melee against the enemy healed the friendly for a percentage. Was a fun system -- shame about the game's PVE having near-zero mob variety, which made it boring as dirt. While Monks (WOW) heal in a similar melee way (with a more interesting rotation), it's not quite the same as having the dual-selection of Warrior Priests.
...oh the thread was PVP. Meh. All MMORPG PVP is trash, so I pick Technician (Enemy Territory: Quake Wars) due to it's superb balance between healing, damage, the ability to turn enemy corpses into repsawn points for allies, and the ability (of all Strogg) to shift health into ammo and vice-versa (which on a healing class is extra useful.)

That was definitely a good one. For tab target games probably my favorite as well. Although overall I'd say TERA's Priest is my favorite PvP healer class.

By far the best Healer i'v played in any PvP game... ever.
You probably never had mana considering the only mana effective spell was in Witchcraft.
Only thing I didn't like about the Warrior Priest, if you fought a Disciple of Khaine it was a stalemate.
