If you like sandbox, and I mean real sandbox you should check out Ark Survival Evolved. Send me a message if you need a server, looking to give it a shot and don't know anyone that plays, I will be more than happy to get you started. Our server is clean, heavy modded, super running and great helpful and friendly community. Have a look, you will be happy you did! On the server, just give a shout out! Anyone will help, to find me, look for Prayr, TwoFalls Castle, and spawn in West 3. You will be close to help there!

I think the OP mostly is looking for people to join his server so it is not so much single player :)

I have played on official servers and had a blast and consider it more of an MMO than many games we call that now.  The persistent world and sandbox elements make it a lot of fun.  the number of players on at a time likely makes it less MMO, but how different is that from so many games being instanced.

If it had a HUGE map and supported 1000s of players on one server I honestly think it would be the best MMO out.  It also happens to be a lot of fun single player and the devs have said that it will have a story etc.

The big catch is that it is still early access so things can change.   For example, the just did an update to add new biomes that messed up some peoples bases etc.

Wa min God! Se æx on min heafod is!

Every single screenshot is showing one player.

    doesn't multi-player imply...bah, why do I bother.

I'm not sure I understand what OP is trying to communicate based on the title. Can we get some clarification on this "More MMO than you think"? Don't get me wrong, I am hoping you're right but so far i see very singleplayer...
I can't reply really to his experience.  I can tell you mine though.  Imagine you and your friends enter...well... Jurasic Park.  The land is untamed and ripe with danger.  You show up on the coast with your friends and go.  You build a pick, hatchet, campfire.  Kill stuff.  Eat.  Hunt.  Build.  Together.  Or not.  It's up to you.  You build a base.  You work from there.  Hunting and taming dinosaurs.  You look for resources.  All of this can be done together or separate.  You have a chat window and in game chat.  The in game chat is proximity however.  So you need to be close to the other player to talk to them.  If you make friends with your neighbors, you can protect each others' places.  If one person gets in trouble, others are there to help.  That's the whole gist of the game.

Now the problem with that is you aren't really forced to do anything.
Here's what I see as the Pro/Con side of this.

    Pro:
It allows you the freedom to do whatever you want where your measure of success is equated with not dying.  Then you'll build from there.  You'll start to get invested in your dinosaurs, your home, your neighborhood.  Dinosaurs (or other players if that's the type of server you're on) WILL come and try to destroy your place.  So working together in that realm is of high value.

    Con:
Your neighbors can be dicks.  Hence why private servers (imho) is the way to go, unless you like the aforementioned play-style.

This is the first game I've played in over 15 years that feels like a real, terrifying world, packed with danger and excitement.  There is so much to do!!  From cowering in a thatched shed, huddled over a fire and clutching a stone hatchet you can go to living in a stone and metal fortress, protected by Gatling Turrets with an arsenal of handguns and sundry personal weaponry, and with a host of tamed dinosaurs at your command. For that alone I would recommend the game to all and sundry.  There's masses to do and I only paid £15 for the game in the Steam sale.  I've already had my £15-worth of heart-pounding fear and fun and I have only scratched the surface.

As in all Survival games, PvP servers have more than their share of griefers, gankers and vandalism, so I stick to unofficial PvE servers.  Trust me, the carnivorous dinosaurs are more than enough threat all on their own.  :D  You can still form tribes, of course, just to co-operate and survive against the harsh environment.
