The time has come again to get a new desktop. (Old one died in relocation) Total nub as to know what I even want. I'll be doing high end gaming + live streaming from it and have AU$2000 to spare. I need the desktop + monitor + speakers + everything a computer needs to run etc. Had some good success last time asking here and I have a feeling doing something like going to Harvey Norman or something like that may not be the best option.

It has Ryzen 5 3600X (6 cores), 16 GB RAM, the GPU is only GTX 1660 Super it's not particularly powerful but it offers good price/performance ratio, and it has fast 1 TB SSD.
The build is missing operating system, monitor, speakers, keyboard and mouse. But at the moment it's only 1 146 AUD according pcpartpicker, so you should be able to fit all those missing parts to your budget.
Where is a site that you can buy stuff from? Giving you links to American sites probably doesn't do you much good, as prices will be different where you live.

Are you OK getting peripherals like the Monitor, Speakers, Printer, Keyboard/Mouse someplace else? They seem a little over priced on that site. Do you need an 8-core CPU? Also the selection of some things like PSUs isn't great.
The issue with min/maxing is you might get something for a great deal, but it might be something you don't want to live with for 2000 AUD. For instance a flimsy case, or an ugly monitor.
The idea behind having two RAMs is that they work as a kit where both transfer data at once, doubling the bandwidth. Choosing a kit of two guarantees they will work that way.
I'd also recommend the system Cleffy build. It looks good.
