I am not sure about banning AI generated content, that could be quite useful for MMO development.
It's mostly just them targeting the use of any low-effort AI generated media.
There's definitely a place for AI generated content, but it has to be used appropriately.
Churning out art using publicly scraped training models and slapping some story in there you made GPT regurgitate without even doing an edit pass? Not quite appropriate.
Since all those AAA suggestions in the OP are different flavors of the same oatmeal, I'll recommend Planeshift for people wanting an old school MMRPG where role-playing is more strictly enforced (4th wall/IRL discussions must remain in a specific channel) and socialization is highly encouraged.
Planeshift is community developed and driven. It is also truly free to play.
It's been years since I've played, so I'm thinking of reinstalling and seeing how things are now.

Not that much older really, was using it as a learning project while I was beginning coding since CrystalSpace is/was an open source engine.
We can all start to feel our age:
I have a friend who I have known for 28 to 30 years. About four years ago she said "when we tell people how long ago that happened lets just say it was a few years ago." Working that out I said "so we take how long ago it happened, divide it by six and there we go." She was quite happy with that.
ESO - decent side quests, pve content, everything voiced but love or hate it combat
SWTOR - is always a good option for at least playing through from level 1 if you enjoy story and classic tab target mmorpgs. Has a questionable future due to recent news
XIV - the trial can give you an impresion but It's not a game you can "main" so to speak. Once you're on top of content you're playing other games in content droughts.
WOW - Can't really give an opinion as not played the latest 2 expansions but has always had decent raids and dungeons
BDO - can't really comment outside it's often free for on sale for basically nothing every other month

Hmmmm, FFXIV takes some time to really get through for a beginner as it's super story-heavy; but it is a well-populated mmorpg right now, and there is a lot to do (like a lot alot,)
Also if you've never played FFXIV, you pretty much have to do the story to get to endgame, as content is locked behind story progression- so it can take months to get through as there's 10 years of expansions and patches- all with main story that has to be done to access each expansions content.
I recommend Elder Scrolls Online simply because it's very easy to jump into new content quicker because of the nature of it's overworld progress and that it allows players to pick and choose where they can start to a certain extent.
Black Desert might be also a good choice because of the new Land of the morning light and season servers- that gives some options to let newer players choose where in the content to begin their journey.
Guild Wars 2... i haven't played it in a long time now, so i don't know how much that's changed, but i remember it being story heavy as well (sorta), but i do recall the open world being fun, and levels scale to character in those regards so that's a good amount of options- i'm not sure how populated it is these days.
Those are the only one's i can comment on, Warcraft and Starwars i have not dabbled in in a really long time, buuuuuuuuuuut, now that i think about it; Starwars was massively fun to jump into from what i remember. (though i'm a huge starwars nerd so take that advice with a grain of spice)
FFXIV has been overhauled a lot. The first 70 or so levels had their XP curves adjusted quite a bit. So leveling is now a lot quicker. Also for your Chocobo companion when you unlock it. It levels up a lot quicker now. Which is nice.
I am actually rerolling myself now on Balmung server and having a blast to be honest. I can skip all the side quests and just focus on the Main story quests and your class quests.
For me XIV is just so slow. The game is good in many ways, but the combat and leveling is just so slow. One thing i like is your one character can do everything. You can max all crafting, be a healer, tank etc etc. The combat is just so slow to me. You will have a LONG journey before you even think about endgame.
ESO is solid, but if you like crafting and what not you need to be an ESO+ member or else you will be playing an inventory management game.
For GW2 i like the open world stuff, but not a fan of the dungeons. I never made it to end game, but they seem to be more like giant zerg fests and there is no trinity system.
I have not played star wars in years I really enjoyed leveling up characters for the story. It felt almost like a single player game.
WoW you pretty much know what your going to get. I played a new char in wow not too long ago and enjoyed it
If you want something newer there is always new world. It is not really that bad and they seem to be improving it.
There is also lost ark which is "f2p" Combat / leveling is pretty fun and there is a ton of things to do. The dungeons / raids can be challenging and have some interesting mechanics. I would definitely read a guide before entering. It is a f2p game though and you will hit a wall where progression becomes painful w/o spending. From what i read you can get pretty far now before this happens

Its funny that this is the most common list when people think about newer MMOs, but where is New World?...... It is more recent than any of these games......IS it that bad that people dont even consider it?
It's funny, I loaded it up the other day to give it a try again (tried it several times during the years, and it's never quite connected). One of the better, and worse feelings about Eve, is that I just have no idea what to do. The pure sandbox feeling is great, but that's usually something I'd have dealt with at a launch, now I feel like I've got 20 years of catching up to do, or trying to figure things out.

I just tried making a character and got to the point where you click Leave, and it just sent me back to the tedious "story" screens again and yet again. I was told each time I had points to spend but no idea was given where to spend them or what I could spend them on. Binned the game.
For me XIV is just so slow. The game is good in many ways, but the combat and leveling is just so slow. One thing i like is your one character can do everything. They have done a huge overhaul of the leveling experience.
- Leveling in lower levels is much faster now, especially if you have XP earring and XP headpiece... you literally blasting through the lower levels now.
I was doing just Main Story quests and Class quests and quickly outleveled the Story quests by 10 levels when I reached level 30, so I unequipped at least the XP headpiece.
Leveling was a real slow chore before, forcing you to do almost all the side quests, doing some Fate's just to be able to continue the Mainline Story progression. But not anymore! I am not joking, but the first 30 levels alone are going like 10 times faster now than before.
Lower level dungeons have been greatly streamlined and are pretty quick runs now. And if DPS queue times are long on the server you are on, you can just do it with an NPC group now.
- You Chocobo companion levels incredibly fast too now, so that is really nice and he will be more useful real quick.
When it comes to slow combat, that greatly depends on the class. My main character is Paladin and I know this class has very slow combat, like most tank classes have in all RPG's / MMORPG's.
DPS classes, like Monk run on much faster rotations, with faster CD's the higher level you get.
All in all.... FFXIV is much more a traditional MMO like EQ2 and WoW in terms of combat, not some fast paced Action Combat RPG like the newer Final Fantasy solo games ( FFVII remake and latest FFXVI ). So you either like tradional MMO's or you don't.
NOTE: Steam Summer sale has now an insane good deal on FFXIV Complete Edition for just 20 bucks or so! This gives you all the current expansions! It's a steal.

Honestly, I'd be surprised if they are keeping anything from the original engine over just porting the assets and rebuilding the rest with blueprints and some extra code. Copying over parts like the character mechanics could be done, but it could also be rapidly replicated with the opportunity for better compatibility with Unreal Architecture/modules and their Reflection system.
It just makes more sense to remake the code than to try carrying it all over.
