You do have to suspend your disbelief a bit with the move where you magically attach your shield to your back which lacks any sort of attachment points and do a two handed overhead strike. Maybe magic invisible Velcro? I know it's fantasy and just a nitpick but the rest of the animation looks so good it's hard to understand why they couldn't think of a more convincing finisher move.

I don't really think "that's" the way to look at the shield animation. Definitely not portrayed as being "magic." It's something you ignore. Just like having two handed swords awkwardly hang off a character's back like a boat oar. I get the issue with having something hanging off a character's back without attachments but it's not a "magic" thing.
It's more about the designers not really caring about that detail. Which is a shame.
Then again maybe they just don't think it's important, possibly thinking that eventually it's a detail forgotten about?

I consider these things abstractions. Everything about most fantasy combat is an unrealistic abstraction if it's examined, not just shield handling. Like you say, we ignore them for the sake of suspension of disbelief. If we start looking at how unrealistic the entire setup is, then it ends up ruining the entire experience.
