Why would Amazon think anyone would want to watch a show on a twitch stream with streamers? Maybe the poors?
I think it might be to test out the watch party system they launched and then took away - see if there is any interest in it again. I personally don't want to watch the show when a streamer can just talk over it - especially if I'm really interested in the show itself.
I'll watch it because Walter Goggins is awesome in everything he's in but I don't have high hopes for this esp. after the disaster that was Rings of Power.

They never have enough money to do 20 episodes. I am happy if we get 13. How much they butchered 3 body problem. I have watched the superior Chinese drama that actually did it justice in 30 episodes. Also the game was presented in a better way in the Chinese version. The ship part was truly well done there too and had the proper gravitas. Disgraceful the Netflix version.
The only thing was they didn't show the torture during the Cultural Revolution explicitly but that was to avoid the Chinese censorship and probably not allowing the drama to release. However Ye Wenjie was explored must more comprehensively in the Chinese version and because of the length given the proper buildup.
It is a pity how much studios are hobbled by the stupid 8 or 10 episode requirement. It's really destroying good stories that are never given enough space to develop. It's all rush, rush and end.
The good news about Fallout is there really isn't a hard and fast story (books or movies) to follow unlike say 3 Body Problem or LotR which fans can compare this to.
We've seen numerous Vault Dwellers emerge in Fallout, and normally players made their own story within the confines of the Fallout Universe.
So whatever story the producers decide to tell will probably be fine, as long as it incorporates the well worn tropes of Pip Boys, Power Armor, Stimpacks, Deathclaws and of course, Nuka Cola.
Bonus points if they weave in my favorite weapon, the automatic combat shotgun.

If even when having a previous solid script/story they fail miserably in 90% of the shows they make from videogames imagine one without anything to keep the writers on track and by Amazon.
Chances this ends being a pile of horsesh.t are astronomical.
