I've narrowed my choice down to a Hunter/Rogue, and plan on going Horde.
Is this a good setup?
I'm still researching some builds atm on the WoW forums too, but all in al I plan on using this character for raiding, pve, and gold hunting.
Any suggestions would be appreciated.

well you cant go wrong with either one, but i will say that a hunter is a bit more useful then a rogue at endgame.

Rogue is the class you will have the most fun with. However...
If you want to to any sembleance of end-game content, go hunter. Both factions have more rogues than they can handle. But, with your choice of faction, you've given hunter actual viability as a choice. The Alliance is almost nothing but Night Elf Hunter, Night Elf Rogues, and Human Paladins. Horde is mostly Tauren Shaman, Undead Rogues, or Tauren Warriors. Stay away from any of those combinations, and you'll have a fairly enjoyable play experience.
I'd say hunter, but I am terribly, terribly biased, since that's what I've played and really enjoyed.

I'd go with hunter, not only are they a strong PVP class but they can also deal the damage needed at end game. Not to mention the flare reveals rogues so they wont be a problem for you.
Rogues are fun but you always need an escape route. and they do alot of DPS.
But i think it's all based on which way you want to roll.
If you pick hunter be an orc or tauren they are the strongest for hunters. and for rogue, i'd pick Undead for the simple fact of WoTF. No worry for fears since you have that.
look mate hunters are more "fun" but if u wanna pvp or duel etc better rogues are the way to go!
I actually found dueling with my rogue to be highly difficult. That is to say if Im going up with soemone of similar skill to mine. The main weapon for a rogue is suprise and that element is taken away in duels. Most of our damage comes out of stealth and more than a few classes just take that away right from the start. Not bad...but duels are a bit harder than straight up pvp.
As far as pvp in Bg's is concerned, almost a pain in the ass. I much rather pvp with my warlock any day. Unless Im going up against a similary geared 60 I stand almost no chance. Take for instance my 60 rogue with non epic dagggers taking on a 60 lock decked in epic gear or a mage with a shitload of stamina from epics. Even if I get lucky and crit from ambush and backstab.....hes left with enough life to recover and finish me off. Vanish? ...pff I get aoed or the pet still sees me and wastes me. Staying out of aoe's harms way is also a chore....you get knocked out of stealth constantly when trying to close in and help your team. Blind? Poison? Have fun spending cash to pvp also. After a while, I just gave this class a thumbs down for pvp unless your on a pvp server and get to gank people alot. Otherwise you spend more time running around settign up for the kill than you do any actual killing. Only thing that could change this, is having a regular BG team you go in with and know how to work with each other. Problem for me, is I dont have this time to spend.
Dont get me wrong though, Ive had my fair share of 2 hit and 3 shot kills. Just not enough for me to stay in love with this class. As far as pve, you will be a dps god if specced right. Not really sure how much they can nerf the class anymore, but expect it. Last patch , they nerfed sap.....wasnt in the notes. But I quickly picked up on it as they werent lasting as long and double saps almost always had 1 wear off immediately.
My take...both are fun. But I would tend to think, hunter is less of a pain in the ass. Also be prepared if you pick rogue, class is a dime a dozen and gettign a pick up group can sometimes be hard as well.
