There is NOTHING like capping an unsuspecting bitch...
And there is nothing like surviving an attempted gank by another rogue while you're fishing, pulling out your weapons and beating his ass down, only to look him up in the armory and realize his gear is better than yours :P
I also enjoyed playing a Priest but found the leveling too slow... if the game was new enough that you could still find decent low-level groups I'd play one of them out.
I chose shaman even thought they seem to be very unpopular at the moment they have always been my favorite and I feel they should have stayed a horde exclusive class dranai shaman are just stupid.

I feel like a God when playing this class, it's like an extension of my body...
I see a guy taking damage and my finger has already pressed flash-heal. I see several people taking damage and Prayer of Mending has already left on it's glorious journey, pinging between players making a sound that borders on aural orgasm. As I become accustomed to the ebb and flow of the battle I then make use of my more efficient heals and delight as not a drop of mana is wasted.
Another finger flexed and the party gets an instant spurt of Circle of Healing, nicely augmented by talents and +Spellpower. Every battle feels like I'm painting a picture, what brush shall I use in my masterpiece of life today? Ahh.... a dash of Renew here, a Greater Heal there... yummy.
Of course there's much more to it than that, but healing a group is a geniunely satisfying experience, one that I never thought I would experience when I rolled a priest because I thought shadow-form looked cool
And with the DK frenzy at its peak, there's a lot of demand for healers to help these spoiled brats get their loot. But of course they're plate wearers, so that's ok with me. Also I love warriors for their Charge ability, that one ability alone makes it more fun than most of the other classes.
But the priest seems to be the epitome of avatar control, tactical gameplay and geniune satisfaction at preventing wipes and doing something useful. And if I get bored I can always respec Shadow/Disc and MELT SOME FACES IN THE BATTLEGROUNDS... now I'm no longer a god, I'm an ancient demon ... terrible and powerful and ...raaar..

* can heal (and really good at it too)
* can tank
* can melee dps
* can do range dps
* in-combat resurrection
* out-of-combat resurrection
* stealth: for mining, capturing quest objects, skipping trash, wipe recovery
* innervate
* insta-cast epic fly. saves 3sec of casting mount - and that's a lot ! imagine how many times you have to re-mount for the entire of your WoW life.
* can cap some quest objectives in flying form
* aqua form
* can jump out of the water, cast epic fly
* Night Elves druids can Shadowmeld out of combat, and cast flying form. Useful in tight spots.
* several cc: root, hibernate, cyclone

I'm so with you on this, but from the POV of a Resto Shammy. Converting from DPS to Healer was the best thing I ever did - it has re-ignited my passion for WoW and opened up a whole new gaming experience.
There is nothing, I repeat NOTHING that I've experienced in a computer game quite like the adrenaline rush you get healing through a really tough boss fight and then getting congratulatory pats on the back from your guildies for a job well done. It's rewarding in a way that DPS or tanking could never be.
