Almost all of the Mass Effect/ME2 music. If you look at the comments for the short little ME3 teaser, youll see most people saying something along the lines of OMG! That was epic, and the little piece of the theme at the end when Shepard walks towards the camera is chilling/emotional/epic/jizz!!! Seriously, look for yourself. I like Kasumi Gotos theme from the DLC, though, and Overlord.
Tom Bombadils theme from LotRO. IT MAKES ME HAPPY INSIDE, especially after traveling through the treacherous and tense Old Forest, only to enter a clearing and see a short, Leprachaun-like man prancing about in front of his house, bathed in a single ray of light:
Throw in WoWs original theme, the music from Dun Morough, and a few other similar tracks, plus some of the Total War series music (composed by Jeff van Dyck) like The Duke of Death and Crusaders, and youve got a good starting list of winners.

Civ 4 was great (with its expansion packs/mods). Civ 3 Conquest had some good songs to put you in the mood. I'm glad they re-used it in Civ 4. Simcity 3000 Unlimited had some great songs too, such as City of Dream or City Lights. Both were a perfect match with the game. Then Simcity 4 came by, introducing a different style with Morning Commute and Wheel of Progress.
Donkey Kong Country had some interesting songs. The guys over at OcRemix did an impressive job with gems like Castle Crescendo or Dance of the Zinger.
For MMOs, Age of Conan's Field of the Dead is a classic. World of Warcraft had some good ones such as Forge of Soul. Since Burning Crusade, I think they are doing a good job supporting their zones with their soundtrack, such as Terokkar Forest.
Surprised it hasn't been mentioned but almost the entire Metroid series has excellent music. It does very well to evoke an emotional response before you even lay eyes on an area, going way back to the original but not excluding Super Metroid and the Prime series as well.
My personal favorite is the title screen from Corruption:
I could probably link every Super Metroid or Prime song I could find and enjoy them. Can't say I really fell in love with any particular MMO music however. There are some decent tunes but for the most part, I only tend to remember them if the song makes me nostalgic for a particular area (EQ songs especially). I suppose that says more of the game than the music itself.

Oh, yeah, I suppose I should give a nod to Jonathan Coulton's Still Alive too. Pretty much the only video game song to have me doubled over in laughter. Still gets a chuckle out of me today lol. Epically funny, if there is such a thing.
(From part 4, I think is the best version of the complete song. Not very well known on the west, very popular on the east. The theme has remained the same since the beginning.)

For Final Fantasy VII, I liked the Shin-Ra Electric Company theme song, and how they adapted it when you infiltrate the headquarter. Final Fantasy IV had few gems. The immersion begins as soon as you press "New Game" with the Red Wings Theme. Within the Giant also impressed me.
