Notch the creator of Minecraft was the Co-Creator of Wurm Online and you do feel his touch on things, a nice transition from minecraft to a much deeper experience in my opinion.
A wonderful game that has a diverse, fun and creative crating system, where the things you make use materials you would use in real life, is LotR Online. It is a free to play game right now so you should definitely give it a shot; at least to level. 20 and see if the crafting system is something you enjoy.
LoTRO or EQ2 would easily fit the bill, both can be free to play if you wish although both are best enjoyed with a subscription in my view.
However, the one well worth trying is Fallen Earth, not least because all tradeskills can be undertaken rather than having to specialise in one only. Alienware have some sort of one month trial, not sure of the details.
Vanguard also has a very good crafting system, although the population is very low and that can put people off.
Even tho the game only has a small playerbase now, StarWars Galaxies has oen of the most intricate and complex crafting systems of any MMo to date.

you can also make Ships and large war-hulks(tank in medevil times)
but the best part is the stuff you make is in Demand. since if you die you lose all that's on you. almost all peeps only go out in crafted gear(which puts us crafters in Demand)
Xsyon for sure - it is 100% crafted from the stuff you wear to the tent you live in. Kinda reminds me of building stuff back in the original Horizon days, only better.
