I've seen some videos of Eve, played for about a day a year or two ago, but I've completely forgotten about it.
This is the most important question. 1.) What I want to know is if I start playing with my friend and brother can we play together, like other MMO's. I know we're in space ships, but can we somehow work together etc? Can we do quests together, or mine together, or fight together, join groups, etc?
2.) Are there levels in this game? If so, what is the cap?
3.) Whats the PvP like? Unbalanced etc...
4.) Whats the end game like? Are there instances/raids?
5.) Are the quests repetative? Kill 10 space boars etc...
6.) Are the space ships very customizable? I don't want to be flying around in my starting ship forever with the exception of a new colour etc.

Answer: I am a new player and started because of my brother. We play together all the time. As far as I know, it's a single server, with a separate test server. We do missions together and fight together. We don't mine, but that preference. You could do that.

Answer: There are skill levels. But, no overall level for your character. Each skill caps at level 5. Skills train up in real time. So, even if you're offline, your character is still learning. Your skills define you. There are no classes, per se. In real life, you might be a mechanic one moment, a trucker the next, a computer repair person the next. Eve appears to be similar. Your "class" seems to dictated by what skills you learn up.
3.) Whats the PvP like? Unbalanced etc...
Answer: As far as I know, PVP is unbalanced if you're in a much smaller corporation. Or an unorganized corporation.
I don't currently PVP, but I might in the future.
4.) Whats the end game like? Are there instances/raids?
Answer: There is no end game. About 90% of the content is player made. Characters live out their "lives" and that's the content. If you join a corp. then you'll be handed out different roles, and those roles may change from time to time.
If you're Freelance then you really need to do a little research to find out what you like.
5.) Are the quests repetative? Kill 10 space boars etc...
Answer: Yes, imo missions are repetitive. But, I've only been playing a week. They do seem to be more fun with more difficult level quests, and obviously better in a group.
That being said, I don't like to run missions all that often. I prefer to do exploration, hauling goods for profit, salvaging, and when I do enough research...play the market.

Answer: The ships are very customizable. There are High, Medium and Low slots. Different type of equipment go in each slot. Visually, I don't belive they are customizable. But, there are a LOT of different sorts of ship, each with different purpose.

Find a player-run corporation to join.
1) Yes. Not only can you, but I strongly advise it. Having someone you can truly trust and work with is the most valuable asset in the game, and I mean that quite literally.
2) Not in the sense you mean. Characters do progress, but unlike almost every other MMO, character progression is not the aim of the game. It's just a tool that increases in value over time.
3) EvE PvP is basically FFA (Free For All) That means it can and often will be be extremely one-sided. My advice to you is to do everything you possibly can to make sure that as many fights as possible are one sided in your favour. Initially this will be very difficult; how quickly this changes depends wholly on how quickly you can learn.
4) There is no end game. You set your own goals, and work towards them. There is no end boss. EVE is all about interacting with other players. NPCs are background material at best. There are loose equivalent of raids, but they're very much a minor part of the game. EVE is nothing like WoW. Say it again: Nothing. Like.
5) Yes they're generally extremely predictable and unchallenging. If all you're interested in is PvE, then you're not going to get much out of EVE.
6) Yes. Fitting your ship with various modules and weapons in order to play specific roles as efficiently as possible is a huge part of the game and an important player skill.

This seems like the MMO I need after playing themeparks like WoW, Lotro, Rift, Guild Wars, Aion etc...
I'm going to give it a definate week of 3-5 hours play time per day, to try my best to get used to it! I really want to like this game!!

I strongly recommend doing some preparatory reading. EVE can be a bit baffling to people used to the hand-holding and dev-provided direction of games like WoW. It's good that you have someone to play alongside - EVE strongly rewards socialisation, and if you and your brother are going to be playing alongside each other, you can develop your characters in complementary ways - EVE also strongly rewards specialisation.
So long as you can show that you've at least tried to do a bit of research yourself, EVE players are generally pretty happy to give new players help and advice. If you show a bit of bravery, persistence and fortitude, you may be surprised at how helpful the EVE community can be. Conversely, whining and crying will get you zero sympathy, and even negative in-game consequences.
One piece of advice: DO THE TUTORIALS. People will get impatient with you if you ask questions that are answered in the tutorials.
