If multiple, just pick the one you've spent the most time playing.
Just curious.
(There are mosre games to list, but not enough poll slots.)
2000-2005 ONLY
Sadly, polls only have one response.
I played UO (briefly) before the option of the PvP flag was put in the game. It sucked to be constantly ganked when you left town, or exploited by rangers when you were in town, so I quit. Took it back up when they added PvP flagging.
Played EQ2 for a bit. It was okay. Didn't do a lot for me though. (EDIT: I loved the world, however. It was the game play and grinding that didn't do it for me. Great looking canvas. "Meh" game play.)
Put in about the same amount of time between the two. Probably less than a year, in total, for both games. Tried a few others but really didn't get into an MMO until Eve Online which I played for about a year and ran two accounts. That was the first one I really liked, but that was 2007.
Did play a lot of NWN persistent worlds, but they're not really MMOs. La La Land and Antioch Reborn were my two favorites. But I played others.
Pretty much lived and breathed Eve 24/7 2 accounts and co ran a corp,in the end it was more like a job than a game in the end.
Also dabbled with stuff like Anarchy online at that time
That's why I quit. I was the mining and minerals officer in an industrial corp which was part of Dusk and Dawn. It really became more of a 'job' than a game by the end.

I played Lineage II. It was a pretty hard core game. Players can be PKed (Player Killed - I haven't heard that term in a bit ) anywhere anytime outside of cities and the grind was legendary. I quit when I realized it was taking me 100 hours to gain 1 level. I could've used that 100 hours to play an entire game (I played an entire Baldur's Gate in about 60 hours) instead of just 1 level in Lineage II.
Why in the world did you not list WOW (released in 2004)?
I avoided MMOs until WOW. I was into competitive FPS games with rankings, first it was Quake 1 thunderwalker CTF and then it was UT domination. After that I played mostly D2, WC3 and Battlefield 1941.
I had zero interest in UO after their horrible launch. I also didn't want to pay a sub when I could have more fun in competitive FPS games. EQ had the worst graphics possible along with the worst gameplay style where you sat waiting for world spawns and if you wanted to join friends who have been playing they always wanted you to pick a class they didn't have in their group.
SWG launched without space combat and you couldn't start out as a jedi on launch.
When I used to live in the Philippines... Ragnarok Online. Everyone in my school played it, and my friends played it. Nothing like grinding with friends.
I didn't hit the mmo scene until '04 with the launch of WOW. What a game in it's heyday.
I always laughed when I saw anything to do with EQ, to me it seemed so beyond geekdom. I was perfectly content with D2, WC3, and the original Call of Duty. Holy crap, did I ever miss out. D'oh!!
In '05, I ended this period of time with what would be the video game that I spent more time in than any other. The legend itself: EVE Online. I stuck with her all the way to 2011.

DAOC, shadowbane, then back to DAOC. Still love it. Never cared for SWG, and considering it went downhill, and ultimatley closed, I guess I made the right move.
No MMORPGs. Frankly, I didn't find the idea appealing, and preferred LAN parties.
NWN, DS, DSII, any coop RPG, Morrowind, a few coop-FPS like Unreal or Quake 2.

Interestingly, neither of my favorite games from the early era are on that list.
Namely, Asheron's Call and Anarchy Online.
Eve online

Also dabbled with stuff like Anarchy online at that time oh yeah and Horizons.

Too broad of a range, between 2002 when I first started playing MMO's and 2005 I had spent time in Lineage 1, DAOC, Shadowbane, Lineage 2, and WOW.

UO>EQ>SB>DAOC , roughly in that order.
I play EQ on an emulator to this day, it beats most newer MMOs by a mile
The above is my personal opinion. Anyone displaying a view contrary to my opinion is obviously WRONG and should STHU. (neener neener)

The one most played would have been Anarchy Online.
But, I also played during those years: Asheron's Call, Asheron's Call 2, DAoC, EQ2 and Ryzom,
Neocron
Earth and Beyond
SWG
Planetside

Did the OP even play MMO's during that time period? He left out the most played games of the time.
