Looking to try out a new MUD....Heres what I like and dont like and Im open to your suggestions
Like:
Lots of races & classes (fantasy based preferred but will try sci fi also)
Crafting system
Levels or skill based is fine
Maps (Dont like not having a clue where i am)
Good inventory system where i can easily find my stuff
Large world to explore
good community/economy if possible (not necessarily large but active and easy to use)
Dont LIke:
Having to eat or drink to survive (I tend to afk and dont want to come back dead from starvation)
PK (not a fan of pvp in any form)
too much typing (I realize they all have some but dont want to be typing every second im playing)
Permadeath

Have you tried Achaea? As long as you don't mind having the ability to spend real world money to get credits it's hard to beat the Iron Realms games.
As for the maps that really depends on the client you use. There are plenty that will map as you go. To reduce typing use a client that allows for a good trigger system, but realize that you are playing a MUD. Typing is just something that goes with it, and honestly once you get into it you won't notice the amount of typing.
I agree with Traugar, nothing beats Achaea or Lusternia, the only problem with Achaea or any Ironrealm games is that it's RP enforced -- if I'm not mistaken.
The only mud i played was Revenge of the Jedi (rotj). Its still going too.
The two best places to search thats ive ever known are http://www.topmudsites.com/ and http://www.mudconnect.com/
If its not on those its probably not worth bothering with.
I'm a fan of the IRE Games and I've played Lusternia for a long time. I haven't played for a while, but I remember it having tons of PvP. In fact, all of the IREs are focused on PvP and you need a script or really good with triggers, aliases, etc to survive. You'll need a basic one for regular PvE combat as well.
Although, there's tons of other stuff to do so they are worth a look, at least. There's tons of story, crafting, exploration, questing to be had there. I hate PvP too and I managed to stayed out of it for the most part - but that basically invovled me avoiding a bunch of quests, areas and events.

Are you using any special client to play the MUDs you're trying? Something like MUSHclient can be customized with various plugins to include HP/mana bars, maps, item tooltips, and many more helpful things that make it a little more accessible than staring at pure text.

I had a lot of fun with Icesus.
Things like classes that require in game accomplishments to unlock, magic schools such as acid (hell yeah!) and the mastery of said magic taking a long time. There was also the ability to resize things, that is, if you have a breastplate fit for an ogre, trying to wear it as some tiny gnome like thing wouldn't really work, so you'd pay to resize it. Crafting was in last I played. There was a map I believe.
I think there was multiclassing, as well as races being better for some classes, or outright required to reach the top ranks in some. There also was a class that used darkness, and in order to see you had to be a race that could see in darkness, or have an item. If you were just walking by these people with their darkness, suddenly you'd not know where you were til you or they moved off. Kinda neat.
I can't remember if there was PVP, and if there was at all I don't think I encountered it much.
The game world is huge, with hidden places too. Clues for these places were in descriptions for the place you were at sometimes.
Also besides sight I think races had strengths weaknesses and abilities. Some took time or levels to unlock. But for example, one race might regen HP faster than some other races, but be weaker in other areas such as magic ability. Some races such as a beholder type thing, couldn't wear all the kinds of armor available, but got other additional slots. Like they could have several rings, one for each eye stalk. Their natural armor was terrible, and they had quite a few eye stalks which were devastating to be struck on, which lead me to try and find some really heavy armor rings for them ha. But beholders got several abilities as they ranked up that allowed them to wound a foe, damaging it slowly over time, or paralyze etc. A team of beholders could take on a monster more powerful than them by far using their eye abilities - wounding it and keeping it unable to attack and such.
It was intricate, and fun with a very healthy population. Check it out.
The only other MUD I really, really enjoyed was shut down due to an admin's unethical behavior. Using money from his company to pay on his house instead of fund his gaming company employees, for example. Anyways, that was GalaxyWeb: Stellar Epoch. The closest MUD to EVE really. Spaceships, exploration, economy, skill progression rather than class, pvp, modular ships including adding additional fuel, quarters, cargo space, weapons etc. Very advanced code in terms of navigation. But yeah, that one shut down.
