I see in the class/job (or whatever it's called in this game) listing that there's several crafting choices. Is crafting and gathering a way to advance? Is it well developed? Is there a market for crafted goods? I'm particularly interested in fishing!

Crafting and Gathering is totally a way to advance, they are their own standalone classes with abilities, gear, levels and everything.
From 1.0, the crafting (Disciples of the Hand) classes are Alchemist, Armorer, Blacksmith, Carpenter, Culinarian, Goldsmith, Leatherworker and Weaver. The gathering classes are Fisher, Botanist and Miner.
The only problem is I think I read in one of the letters from the producer or an interview that Fishing was going to be toned down and made more of a pasttime thing you do for fun, rather than progress.
I need to see the changes myself as Fishing was one that really irked me bad on release,way too many menu clicks.
I think be patient the open Beta,i assume there is one will soon be around the corner.If not then there will be loads of information,one thing the FF community always did well was load Wiki with tons of information.

So high-end crafting recipes and materials come mainly from raids? Is raiding the end-game PvE focus? Crap, I'm still looking for a game where you can be a desirable crafter without having to do this.
So then hire raiders to get the recipes and materials for you in raids. Most raiders will not be crafters. Ever watch the show Sword Art Online?

It's a wait and see thing at the moment. In 1.0 the crafting system was incredibly lucrative even if you didn't do some of the high end boss fights and dungeon speed runs.
I was mainly a crafter and pretty much did nothing else except get a paladin to 50 for the heck of it. Just from buying materials from NPCs and other players, I still managed to make anywhere between 1-10 million gil a week easily depending if I was lazy or not.
Though one of the main reasons why it was so lucrative is because it was so tedious. It took a couple months just to master one profession, and most didn't take one simply because all you did was stand in one place for five hours a day playing a mini game. That made crafters somewhat rare when compared to the demand of items that adventurers had.
But don't expect a level 50 crafter to be able to beat a level 50 monster in one on one. There are reasons why they're crafters and that disciples of war are called disciples of war. Most of the abilities you earn are for your craft and there are pretty much no attacks.
Yes, but you have a stealth ability (tbc for fisher). Though mobs that are considerably higher lvl than you will be able to detect.
