I'm kinda interested in FFXIV, but I'm the type of player who likes to stick with one class at a time. Can I have a full PvE experience staying with just one (probably DPS) class?

You may be slightly less stronger than you would be solo if you don't have other job abilities to pull from. Though as a whole you should still be somewhat efficient in groups since you'll be in an Advanced Job then, and they restrict cross class abilities much more than the classes. In exchange for this, the job makes you much more viable for groups by giving you exclusive job related abilities.
Back in 1.0 the difference of having multiple level 50 classes was fairly significant when compared to a character that only had one class. The former would be able to take on, say, five enemies at once, and the latter fall to two fairly easily. This is because the multiple max levels was able to give his main class such abilities as instantly restoring a quarter of their life, increasing their defense significantly and buffing their attack power via another classes' buffing abilities (not to mention potentially having high levels of cure and the protect spell).
In A Realm Reborn the monsters out in the world are weaker than they were in the original version, so it's possibly even more viable just to focus on leveling one class. Thus it's only important to work on other classes if you want to maximize your survivability and DPS when playing the game solo.
You can but you will be gimp specially as a class cause jobs can't get abilities from any class just 2 other classes and very limited. Classes can equip almost any skill from any class which is great for solo but for party jobs are prefered.

My opinion
You could just play a single class, but I would recommend at least getting a job, which requires getting a second class to 15.
For example, if you would like to play a caster DPS, you would need to get Pugilist to 15 in addition to leveling your Thaumaturge to max level.
Leveling other classes simply give you access to more abilities and spells but is by no mean necessary.

FF MMO's are designed for you to level every class/job. That's the entire appeal of the 1 character approach, which i wish every MMO went to.
Well there is a bit more to it.
I don't pretend to know exactly what Square had envisioned but there are two choices.
You can choose to never specialize in a JOB and just choose from classes.The difference is a JOB is more specialized,apparently for group play,while a CLASS is more in line with soloing,because you can mix and match.
So if you only want one choice to stick with,you might want to check the REQ's for a DPS JOB.That would require you to level a certain class to level 30 and a secondary class to level 15.Then with those two classes you unlock a JOB,basically a specialized single class that cannot mix and match classes anymore.
An example would be a MONK [JOB],i don't remember off hand,but i think is a Gladiator/Pugilist [CLASS] mix.Once you go Monk you can no longer add any other sub class to it,that is your class forever on.
I made this point because if you are not going to level a bunch of classes and only want one,you might as well level the two and get a JOB.The whole benefit of remaining a class is so you can mix and match.
Never forget 3 mile Island and never trust a government official or company spokesman.
Jobs are essentially souls that can be equipped/unequipped, so no you aren't stuck as one job forever. You can go back to your class whenever you want.
Long story short, no - you will need to level at least 3 classes, 1 to 50 and the others to some extent, usually not higher than 26 but maybe more or less depending on the class, if you want to be taken seriously at endgame. Here's a chart so you can plan out what you need - you should at least get the most valuable abilities from your jobs corresponding "sub-classes".

There are some cross-class skills that are absolutely essential to a role. For example archer lvl 36 Quelling strikes reduces hate which is very desirable for all DPS classes.
Invigorate and internal release are also good skills for most classes.
You can probably get by fine with one class, but you will never be at max potential without cross class skills.
Play how ever you like, but be aware FFXIV is not like many other games where 1 class is fine.
Be forwarned that a raid leader, when given the choice, all other things being equal, will select the person who has the main job and sub classes leveled to the point where they have all of the best cross class abilities. Otherwise, you're not bringing everything to the table.
In other mmo's with talent trees, all you need was to be max level, spec a certain way or at least meet the threshold dps requirement, have the gear required for that instance/dungeon and that's it.
In FFXIV, instead of Talent Trees you have the cross class abilities. If you have 0 cross class abilities, you're gimped.
Beyond what everyone is saying or trying to tell you:
No. You cannot hope to be on par or 80% as good as the next guy if you haven't leveled up other classes. There are too many damage buffs, defense buffs, and debuffs that you can gain. You'll also get bored, fast. You need the other class skills to not only make you better, but give you something to do besides 1-2-3 repeat. You'll see what I'm talking about in game.
