Your character is always online, you as a player are not.
You can script functions for your OPC (offline player character) to do while you are offline. It could involve "sleep and rest and consume minimal food" etc. kind of thing. So you'll just stay in your hidden dungeon room while offline.
Ok I start to see the pattern here:
Me: "They can't have think of that, that would be too awesome"
You: "Well yeah, we thought of that and it's gonna happened".
Me: \o/
To be honest this game looks just too good to be true.
If they can really pull it off, that could be a gold mine for the developers.
I really hope they are not just talk.
I love the design journals, but I can't help to get a feeling that this project is becoming way too ambitious to pull off. I've seen too many cool design documents for MMOs turn into either nothing at all, or half-baked un-products like Mortal Online, for example.
Here's to hoping I'm completely wrong and we'll be playing the game described in the next few years :)

I am wondering if hidden rooms, safes, basements and cellars tie into the architecture tool we saw previously. Can these all be added on after construction? If so do they need their own blueprint? Are architects going to be privy to some very valuable information such as exactly where you are likely to be hiding you treasure?

Hand-in-hand with this goes another question: is it possible to blindfold player characters or put them in a closed wagon and thereby obscure the location of a structure?
Would in-game information give away the location of a structure even if a player character could be blindfolded?
Can NPCs be questioned/bribed/threatened/tortured/romanced/extorted/blackmailed to reveal architectural information?

There will be Offline Player Characters AKA you are a NPC when you go offline
I don't think that is possible,i can't see a developer loading thousands of player models,no way.So i assume that you are only pretending to be a npc offline,we won't actually see them.Or there will be some extreme limitations on visuals being drawn.
The ideas are not too tough to pull off,we are just used to really lazy developers.Statistical and menu system ideas are only code, creating assets and animations takes way more work.

Actually the intention is they stay in the world the whole time. You can see them, you can interact with them, you fight with them and kill them. There are plans to be able to script your OPC (Offline Player Character) Behaviours and trade and share those codes.
I really love everything I read about CoE, however I hope it will be done properly, because I already see many exploitable holes and -even though the game addresses a niche of players- it can easily be ruined by the wrong crowd if not fortified properly on each and every one of those features.
I'll be following this game and allow myself to -romantically- hope once again, that someone will make a proper... World that players can 'live' in.

It was done in Age of wushu. you could actually kidnap the player while they were offline
Can I dig a tunnel from a neighbor's house to go inside of other players dungeons?
Yes
Assuming they don't build stone walls

There is more about it in one of the earlier Developers Journals which is here: https://chroniclesofelyria.com/blog/347-Design-Journal-3--Time-Aging-and-Offline-Player-Characters
Edit: Gosh I find the formatting here impossible. However, that screenshot is lush.

Join the revolutionary MMO!
Yes I am interrested in this game but I'm very, very sceptical with this massive feature list of yours, not just this one but all of them.
I'll be following this game and allow myself to -romantically- hope once again, that someone will make a proper... World that players can 'live' in.
