When I ask what the best flying MMO/MMORPG is I mean which game has the best flying in it? The most added upon feature? And I don't mean like space ships and plans, I want to play in a game where I can go on the ground too and adventure there. I noticed in games like WoW it's not really that great to have a flying mount. Like it's okay, but nothing that exciting really. Maybe I'm looking for something that doesn't exist...
Suggestions anyone?

I managed 45 feet out of the disk for Mists of Pandaria! Best flyer I've seen so far.

Aion had some interesting flight mechanics but I wouldn't consider them a highpoint, or consider Aion as a great game. It was a solid 6/10 game imho.
DCOU had flight, but not really much for the actual mechanics of flight, it's not a bad game either, but not great.
I honestly don't know of a good game with nice flight mechanics.

Sadly, if you want anything other than bare-bones flight mechanics, Aion is really the only game in town.

Tracking opponents in three dimensions...ugh. But you know, folks been doin' it since WWI sims.
One MMORPG which has flying implemented almost organically that it become extended skill set of a player's movement abilities - in addition to leaping onto a horse, walking up a wall, gliding on top of water, stepping on the head of NPCs is JX3, a Chinese Wuxia MMORPG which after 6 years of operation probably unofficially dethroned WoW as top 3D subscription game in China after it reached almost 7 million active subscribers in Dec 2015.
In JX3, all 12 classes has a unique style of flying, and IMO the best and most fun non-mount flying (limited by stamina) mechanism in current MMORPG:
