I tend to give credit where it's due - meaning I'll tend to rate games doing stuff first higher than games doing that stuff better at a later date.
I try to include both innovation and execution - so I might be giving earlier games a bit too much credit, because I was a LOT more impressionable when I was younger.
I'm not entirely sure it's THE best RPG - but the very first game that always comes to mind when people ask me this question is:
Pool of Radiance
The game combined excellent mechanics, progression, combat, story, exploration and immersion.
For newer games, I'd have to say modded Skyrim or modded Fallout 4.
Honorable mentions go to Neverwinter Nights, Gothic, Ultima series and Baldur's Gate.
Witcher 3 is a great game - but I think of it more as a story than a game. I'm big on mechanics and freeform exploration, so while I love the story and characters of Witcher 3, I can't say, with a straight face, that it's one of the best RPGs. Combat is fun, but not great. Mechanics are so-so. Exploration is weak. Loot is boring. C&C is great, for sure, but it was never really that important to me in a CRPG.
*edit* (I just can't play singleplayer games for more then a hour or two, makes me feel alone. I do not like that feeling. I like story driven coop rpg games, and TSW is probably the best coopgame I have ever played, its not a mmo, even though it's often labelled as such.)

For me it was Morrowind. There was a greater sense of discovery and mystery to the world.

I think Ultima 7 got me into RPGs. Back then I was playing Civilization and a game called Fokker/Foker (a dog fighting plane game), and Moria. Once I played Ultima 7, I was completely convinced in the potential of RPGs. I don't know if it was the best, but it was the most influential on me personally.
Neverwinter Nights because it introduced me to persistent worlds, something I still wish was around -- whole communities based on a single world and story with everyone in character. Of course this was based on the server I chose but it was grand and it eventually led me to MMOs.
Good memories indeed, it was my first true online experience, and like u it introduced me to the world of mmo's.
The
best RPG is the one that started it all for me when I was 5 years old
and that game is, Ultima Underworld II: Labyrinth of Worlds. My dad used
to play that game and The Stygian Abyss allot and I allways loved to
watch him play. It really openend up my eyes to the fantasy genre in
general and RPG's
Later on me and my older brother tried it out
as well. We barely made it out of the castle though because there where
enemy's everywhere, well we could deal with the sewer rats and bats but
there allways the point where you ran into those two headless hairy
monsters who scared the bejeezus out of both of us and defeated us at
every turn, suffice to say we ended up being panicked and fled on sight
or just ended up dead haha, good memories indeed.

Final Fantasy 6 (3 in the states) - This wasn't my first rpg, but it was definitely one of the most memorable rpgs of my life. The overall story captivated you from beginning to end. As a teenager this was probably the rpg that made rpgs my favorite genre of games from that point on. I still to this day replay this at least once a year. I'm also guilty of owning this game on multiply platforms lol. ~ Honorable Mention: Final Fantasy 4
Chrono Trigger - My second favorite SNES RPG. This game set it self apart from the Final Fantasy main series. Everything from the combat system to the amazing time traveling storyline was absolutely enthralling for me as a kid. I loved every single character you had accompany you through your adventure. My favorite part was that you actually got to play one of the villians(Magus) as a main party member. This blew my mind when I first figured this out during my initial playthrough. To this day I still wish for a sequel. This is another game I revisit yearly. ~ Honorable Mention: Breath of Fire 1 & 2
Final Fantasy Tactics (PS1) - My favorite FF game ever. The story is my favorite as well. Another I replay once a year. I still hope and pray to the Flying spaghetti monster that we will get a true sequel to this game someday. I would say this and Tactics Ogre made me love strategy rpgs. From that point on I play any SRPG I can find ~ Honorable Mention: Tactics Ogre
Diablo 1 - This was the game that got me into PC gaming. Prior I was a console player only. As a kid I had some of my best online experiences with battle.net. I made a ton of friends and even ran my own clan of pkpkers lol. This was the first game that I spent 99% of my game time online with other players. The soundtrack of this game was a masterpiece and I love it to this day. ~ Honorable Mention: Diablo 2 & LoD
Warcraft 3 (and Frozen Throne) - Warcraft 1 was my first RTS game I ever played. But Warcraft 3 was and imo still is the best RTS to date. Not only did this amazing game have a great story and campaign. They even added RPG elements with the heroes. Majority of my time was spent on battle.net playing custom games though. I loved the Tower defense games and castle fight games the most. I spent an astronomical amount of time in custom games. ~ Honorable Mention: Warcraft 1 & 2 (+ ToD expac) & Starcraft
FF11 & DAoC - My first two mmos I ever played. Both were amazing games that handed me my ass the first time I walked into their amazing worlds. I played FF11 on my Playstation 2. The game was very well made because even on the console with a 56k dial up connection the mmo ran like butter. DAoC was my first mmo I purchased and played at home. I loved every min of it and to this day wish more mmos would do a 3 faction system. ~ Honorable Mention: Phantasy Star Online (Sega Dreamcast)
There are hundreds and probably thousands of RPGs I could list. These specific RPGs were some of my most memorable and important gaming moments that helped shaped what games I play today.
So I know this is subjective and it will garner a ton of different answers but I posed this question on a couple other sites and so many people heard about for the first time or re-remembered a game that they meant to play but never did.
So what is the best RPG of all time for you?
Mine would be Gothic II though I love the first one I felt the second one really fired on all cylinders. The game had a sense of a living world with NPCs having schedules and going about their daily lives. It was not common at all at the time for a game to do that. It was very immersive. A very close second would be Neverwinter Nights (Bioware, not AOL)
I liked gothic 2 very hard, gets right in the roles, and very good npc design. My favorite of all time though is Quest for glory 1-5 with 2 remake being my favorite. The characters in the game are very rememberable, the quest hard, and the combat fun.
Wow this is such a loaded question. I could make an argument for more than a few games I have played. I have put something down and then backspaced as I write this more than a few times. I am not sure I can come up with just one.
I can't believe that no one mentioned Baldur's Gate II Shadows of Amn. Really people ?
The story, the characters, the world and lore, the mechanics. All still unrivaled by the games released after this masterpiece.
I was debating that or quest for glory, but i quest for glory holds more memories for me. I would say though BG big world edition, is one of the greatest rpg around, due to the huge amount of content.

If so, I'm currently in-love again with Tales of Maj'Eyal and Caves of Qud.
