I've been considering playing this game.  I mostly play solo PvE these days, with some dungeons, maybe.

Can resource gathering be a fun and rewarding experience that helps contribute to a guild?

Very much so.  Airship building in particular requires a lot of mats.  Same with gardening.  As well as getting materials for leveling crafting and for getting your Free Company (Guild) mates items.
Due to frequent travel in my youth, English isn't something I consider my primary language (and thus I obtained quirky ways of writing).  German and French were always easier for me despite my family being U.S. citizens for over a century.  Spanish I learned as a requirement in school, Japanese and Korean I acquired for my youthful desire of anime and gaming (and also work now).  I only debate in English to help me work with it (and limit things).  In addition, I'm not smart enough to remain fluent in everything and typically need exposure to get in the groove of things again if I haven't heard it in a while.  If you understand Mandarin, I know a little, but it has actually been a challenge and could use some help.

Also, I thoroughly enjoy debates and have accounts on over a dozen sites for this.  If you wish to engage in such, please put effort in a post and provide sources -- I will then do the same with what I already wrote (if I didn't) as well as with my responses to your own.  Expanding my information on a subject makes my stance either change or strengthen the next time I speak of it or write a thesis.  Allow me to thank you sincerely for your time.

OK, thanks!  They have gardening?  That was the only thing I enjoyed about Archeage.  How detailed is that system?

Is Gilgamesh a North American server?

What are airships?  Like, flying guild halls?

What are airships?  Like, flying guild halls?

Most systems in the game are fairly complex.  When it comes to gardening, it's a guild effort to grow things.  You can cross breed seeds to produce entirely new produce and get something that sells well or has popular uses in terms of crafting or and or chocobo breeding / raising.

Though gardening as a whole is somewhat limited in that each guild may only have a specific amount of plots, and they need a guild house to be able to do such.

Airships, at the moment, are able to take you to a specific area that is good for drops at max level.  In addition, you can send them out on voyages to bring back items.  They have talked about expanding this with patches, but as of late there have been little updates to them (the feature was released with the current expansion).

The game itself is one of the most well updated on the market.  Massive patches every 1.5 months or so -- with every 3-3.5 months having the biggest due to being whole number patches -- that introduce a lot of storyline quests, side quests, updates to systems, new systems, new dungeons, new hairstyles and outfits and crafting recipees, emotes, dances, new classes, new raids, etc.  This has been going on since 1.0 when there was only about 10,000 subscribers, so they are dedicated to doing such.  The only time they really missed the mark (which was around 3.5 months for a major number patch) was after they launched the game and the team took a small break after making sure everything was running smoothly.

Its major flaws lie with the housing system itself.  It is poor compared to F2P or B2P games such as Wildstar or LotR or even Black Desert.  The main reason is that neighborhoods (such as LotR) don't automatically create more when one fills up.  And they typically only add a small amount once every year, so far.  Which means huge competition and some 10,000 line queues to the server to the serve on the patch day they are added.  Inventory management might be a hassle when you're established, as well.  Mainly because it's easy to fill up your armory, and then get a quick-swap error that you don't have enough room to quick-swap equipment.

To remedy the above they are implementing apartments in a future patch.  Though few know the details of such.  In addition, they are adding more housing next patch, and created a system whereby if you don't access your house once every 45 days, it is demolished and put back up for sale (with the items in it and most of the money you spent on it being sent to you in the mail.  This excludes specific bind-to-house items that are tied to said house, though that mainly has to do with guild houses.

Besides all that, they keep updating things that the community says is broken or wants updated.  Many of the flaws it has had in the past have been remedied to a small degree, with housing being worked on now with regards to the apartments and such.
