I will be tooling around solo late in the evening pve only. What would you guys recommend as far as a good solo build that could deal with groups and good survival? I like pulling groups and standing on their corpses afterwards, especially in a quest type game ;D

Any other class can do good AOE eventually but the Warden can do it earlier and it takes forever to do that build with a Nightblade.
If you can't do a Warden do a magicka sorc instead: same Elemental blockade + Liquid lightning and the AOE pulse from the Volatile Familiar. Better than the Warden later on but you might need to be level 10-15 before you get liquid lightning... bonus: your own damage shield that protects you also does AOE damage.

This time when i came back i joined the community discord, made some friends starting playing it properly and i’ve Been playing it basically daily for about a month now and having a blast, the exp event is helping to level my CP and I’m really enjoying myself!
So good luck in your adventuring - Magika Nightblade is pretty OP especially for soling content later on, but most classes have a decent solo build, like the petsorc I’m running on my main is also pretty solid!
I saw a magicak DK on youtube using a sword and a shield. Can you do that and not gimp your character? I was thinking if you are playing magicak you are stuck with a staff.
If you want the best possible DPS with a magicka build, yes you're stuck with a staff. But if you're OK with less than the best try whatever you like. Just be aware that all other weapons that are not staves use stamina for their abilities. Hybrids are doable but they are tricky even for experienced players. New players trying to use stamina and magicka skills both will typically end up with a mess.
The way ESO works is that magicka builds are the default and stamina ones are like red-headed step children:
My advise to you is learn to like staves at least until you know your way around.
And yes Deltia as mentioned above used to have a great website with good builds but he left in a huff about a year ago and is only recently sort of back. In the meantime Alcast's site has become the go-to site for up to date builds although they do lean heavily toward end-game meta. Stamina templar is a good choice if you like using swords. You will be able to do lots of damage with the weapon skills, and use the templar skill biting jabs for aoe damage, plus you have the nice heals. (btw: Same with stamina warden, very fun class).
To me some just feel more fluid than others so I naturally have my preferences. For example I like the speed of dual wield for my melee characters and absolutely hate the feel of 2HD swords. The bow feels fine to me and I have no problem with any kind of staff but the channeled bean staves do feel more natural when doing heavy attacks to regenerate magicka.
But for me it's all about the results and there is just no beating staves for magicka damage or healing. Hence my usual comment that if you want to do your best at magicka DPS or healing just learn to like staves.
As an aside for historical interest, there was a time when there was a loophole that allowed you to get better magicka DPS when wielding 2 swords - just swords not any other 2 DW weapons. But they nerfed that and buffed staves at the same time almost 2 years ago and it has been all staves for magicka DPS and healing performance since then.

While I don't like Elder Scrolls Online combat, I would never call it "not fluid". There must be some other criteria that he is using that falls under "Fluid" for him.
