It's in good enough shape even if it's still in early access. The gameplay is more polished than most launched titles, and it's also technically already in really good shape.

The story isn't finished yet, so if you wait until launch you get finished story and a couple of more characters who can join your village. But this kind of game is more about building and decorating your village, and at least personally I feel the main story is more of a side distraction, so that the story being unfinished doesn't really bother. I think Dreamlight Valley is already ready to be played now, and it would compare favorably to most released games. I've played Animal Crossing New Horizons, and imho Dreamlight Valley as it is now is already a lot better.

If you decide to play now, there's one annoying bug where exciting your home when NPC is standing on doorway sometimes causes you to get stuck to the NPC and forces to ALT + F4. You don't lose any progress, just the time it takes to restart the game. Otherwise I haven't encountered anything worse than occasional graphic glitch this year. Back when Dreamlight Valley launched early access they had some more bugs, but all the others that I've encountered (playing on PC) have already been fixed.

Wife has loved this game and played well over 30-40 hours last time I checked. She plays on the PS5 and hasn't noticed any game breaking bugs.
