I started playing Illyriad a few weeks ago and I gotta say I love it. Now before I break into why I love it, I'd also love to hear if there are any other Grand Strategy MMOs that are a bit more developed, have better graphics, are not too fast-paced, offer multiple play styles, and isn't P2W.
What I like about Illyriad:
1. The pace of the game doesn't have to be too fast. When starting out you won't have a ton to do but build buildings and learn how to play. Once you start getting into your 2nd and 3rd cities though, there's more to do. Of course, how often you check and update your building ques is up to you.
2. The community is very helpful and will send you tons of resources and information to get started. It's frowned upon to attack new players, as the community wants the player base to grow.
3. There are multiple ways to play:
Want to build a sprawling empire of 20 - 30 cities? You can do it.
Want to learn to manipulate and control trade markets? You can do it.
Want to join a PvP guild and begin wars? You can do it.
Want to send out units that will steal, mess with builds, or just gather information about people and sell it? You can do it.
Want to hunt monsters and carve up their bodies to sell? You can do it.
4. The game itself doesn't do P2W. You can pay to accelerate construction, get bonus resources, or speed up how faster your traders are moving, but that's about it.
The biggest drawback is that the graphics are from 2011, so it's not going to offer you much in the way of eye candy. But, that does make it a game you can access using pretty much any device, as it is browser-based. If you want to try Illyriad you can join up here.

(Well it was working a long-time ago, but it's a small development team and they didn't realize that they had broken the .com Domain as the game is on the .co.uk domain)
