This will be an interesting game. I didn't finish the 1st one because of the combat. Maybe I'll try to force myself through for the sake of this 2nd game. Or just say screw it and try the second game.

Does the game have options for those of us who prefer fights in stealth OR at a range? I never played the first one, but in all games, I'm usually stealth or ranged (Cyberpunk-Netrunner, Witcher 3-focus on Signs, BG3-magic characters, Horizon Forbidden West-Stealth, etc.).

Oh yea, ranged is certainly an option for those who prefer not getting their hands dirty. Whether you can stealth every encounter in the game, or stealth around some of the combat parts I'm not entirely sure - I would assume you can for some, but for others they might be necessary to move the plot along. But in those, you can probably just pick foes apart with a bow till you have to get in close.
Since our demo was all about helping a sword master get his school established, it had an emphasis on the sword fighting.

I was on the fence whether to buy the game or not, and after watching some vids on it on Youtube, I decided to pass because I thought the combat would wear me out after awhile.
I picked the first one up on a massive 90% sale. It was $4 for the base game and all the DLC. I REALLY LOVE THIS GAME. I actually like the combat because it feels more realistic. Two guys going at it in full plate takes a while, and you have to slowly pick them apart rather than just swinging you 2H Sword of +20 awesomeness and one shoting everything in your way. The writing is very good with poignant moments, and appropriate to the history they are trying to portray. I'm very interested in the sequel.
I liked the first one but did not finish it (got about half way through), the bugs got to me in the end. Bear in mind I play any solo game way after launch so they had ages to polish the game.
I prefer my RPGs to be about the characters ability not my ability to menuvar a mouse and keys when it comes to combat, I will play an FPS when I feel like being dexterous
