    Difference?

    Prophacies: nothing

Factions: 2 additional profession; Alliance Battle; Elite missions

Nightfall: 2 additional profession; Hero Battle; Elite missions

    Class Restriction?

    none

    Level Restriction?

    none

    Which one should you buy?

Prophacies.  Just because it's easier for newbies and it's where we all started.  Getting Factions or Nightfall first is like learning to run before you can even walk.

Not at all. There are plenty of people in my guild who don't own Prophecies. All the campaigns have "noob areas" that level your PvE characters before starting you onto the main storyline. Well, Prophecies takes you through the story while leveling you up, but you get my point. That's also a huge reason Anet is releasing GWEN as an expansion not a campaign, and why they're switching to GW2 where they don't have to keep recreating the game with each campaign.

All three campaigns have the core professions that are most important. Factions and Nightfall each bring their own unique gameplay aspects into the mix as well as two campaign-specific professions each, but each one teaches new players and levels them into the main story equally well.

At the moment anyone planning on buying the chapters should start with Nightfall - Prophecies - Factions
