An easier way to defeat the Killer Cactus

I've chosen to be an Herblist, and Ganon wanted me to kill 2 Killer Cactus in order to get that profession, but the problem is that the monsters are level 14 and they pwned me easily. BTW, I happen to be between levels 9 and 11.
What should I do in order to survive attacking one Killer Cactus?
