What is the most immersive mmorpg that is out right now? I'm looking for something to scratch my mmo itch, and I don't care about anything as long as the game immerses me in its world, and makes me not want to stop playing.

Lord of the Rings has a very RP friendly and immersive world in my opinion... With its crowded with player taverns, playing music, the lore is very nice.
I felt pretty immersed in Conan as well, but then I hit a loading screen >.< But I think the most immersive game on the market right now is Fallout3, but its singleplayer.

and is fallout 3 anything like oblivion? or isit a whole different game?
Most people say fallout 3 is oblivion with guns.

Fallout 3 is a whole different game really. You have to play it to see it.
LOTRO is probably the most immersion driven experience thus far. Apart from a little FTP MMO called PlaneShift which almost forces you to RP much of the time. Tabula Rasa is great for roleplaying too, but it goes kaput in February.

I'd recommend LOTRO too. Been playing it on and off since release, in between stints with other games.
Remarkable how immersive it feels... the audio is incredible, visuals are top notch, story and questing are fantastic, but not for the lazy, and the community is the friendliest I've come across, at least on Landroval.
The only potential knock is that it lacks the drive for progression other games have. That also make it a much more relaxing game to play if thats your thing. Getting into a raid, or new gear, or a new level isn't as big a deal as your typical MMO. So it lacks that feel of having to log in to keep up.
Thats why I keep getting bored after awhile and trying out new games, but I always come back to LOTRO for my fix and its hard to log out of that world every night.
