Can you unlearn a tradeskill, like you can a certain talent build? I am tailoring and went with skinning as well. I am not sure if skinning was such a good idea as my second profession.

Yes you can!

You can click on "C" to bring up your character selection screen, click on the skills tab and in the upper window, under the heading "Professions", click on the skill you wish to unlearn. Once you do this, at the bottom of the Character skills window you will see a bar with that professions name. To the right of that you will see a tiny box with a circle with a line through it. Click that and it will ask you if you want to unlearn that skill.

You do need leather in some of the Tailoring items you can make however, is probably the best choice to support Tailoring even if it isn't as heavily reliant on it as say, Blacksmithing with Mining.

Edit: Besides, the armour patches you can make give you like 50% (probably a bit less, can't remember) extra armour for putting them on cloth.
