From what you wrote. I would say go minstrel. Althought they are not the toughtest by far. I can solo a lot on my mini. They also have the option to reduce their healing output in exchange for enhancing their combat.

Yep I allways seem to feel like that when I'm not playing swg. But I'll live with it as the community on Scylla is all but gone. However the game changes are pretty good imo. Still not as good as pre cu. But oh well.
